Established in 1798, Highland Park is the most northern of all Scotland's distilleries. Around the end of the XVIIIth century, the clergyman Magnus Eunson, a famous smuggler, seems to have distilled whisky at the same spot as where the distillery now stands. He was hiding illegal whisky stocks under his pulpit. Specificity: part of the barley is malted on the premices. Highland Park has two pairs of stills of the same capacity. With its old gold colour, the aromatic and mild nose gives us malted, vegetal (very precise on heather) and vanilla notes. The rich, ample and oily palate has a beautiful development and confirms the nose aromas. The elegant finish gives us a malty mildness, with heather, chocolate, caramel and fruits (peach).
